Highlighting a transformative initiative, she says they developed a local thickening agent to thicken foods that help patients with dysphagia or difficulty in swallowing. This thickener was nutritionally better than the starch thickening agents and was fortified with minerals, fibre, and vitamins. “We tried in a few places across the country, but I had to shelve it due to Covid and lack of funding.”
